Savoury Pick n’Mix! Super fast tomato Soup with Sprinkles Recipe

Soup is a great way to get nutrients into kids, from the vegetables, bone broth, garlic and dairy.
All kids (and adults!) love ‘sprinkles’ and these are my savoury ones to make dinner a bit more exiting. Kids love helping themselves to things rather than being ‘served’. All these toppings are perfect served in Yumbox Chop Chop jars. So easy to make in advance, pop on a lid and store in the fridge or on the side until dinner.
Toppings can be varied depending on season, the soup you are serving and your favourite ingredients.
Here are the Savory Sprinkles we used:
Pumpkin seeds, popped (heated in a pan with sea salt for a few minutes)
Sour cream with some chopped chives stirred in
Parmesan cheese, shaved with a peeler
Pickled red onion (finely sliced and left in cider vinegar and maple syrup)
Roasted carrots (cut into rounds and cooked in butter in the oven until golden)
Mozzarella, cubed (or buy little balls)
Chopped red pepper
Tomato Soup Recipe:
Place 4 large garlic cloves (crushed) into a large sauté pan or saucepan with 2 tbsp olive oil. Heat for a few minutes then add some chopped fresh or dried thyme, 1 litre tomato passata (4 cups), 500ml (2 cups) good quality homemade or bought liquid chicken stock, 1 tsp sea salt and 4 tbsp cream cheese. Cook until hot, whisking a few times to mix in the cream cheese (you can blend/blitz the soup if you prefer). Serve in large bowls along with the sprinkles.
